Xi'an dishes a hit in Paris

INTRO
A popular Chinese dish from Shaanxi Province has made its way to the table tops of Paris. Our correspondent Han Qian has the story.

"My name is Zhao Baoyan, I'm 31 years old, from Xi'an, China. I brought traditional food from my hometown to Paris."

"In Europe, when French people and even Europeans mention Chinese fast food, people feel that it is cheap, convenient and not high quality. So I wondered why Chinese fast food can't be high quality with a good sense of design. For example, I made a very small change. When we cook the noodles, we prefer to add some green vegetables, but from my experience and communication with French people, I found that they don’t like boiled vegetables, they prefer to eat fresh vegetables, such as salad. So I gave it a try. I used a type of French local salad to replace small green cabbage or Chinese cabbage and put them on top of the noodles, then I found that they really liked it."

"Mr. Zhao is a fusion of Chinese cultures. The wall behind me is decorated with 3D printed pieces of armor worn by China's Terra-Cotta Warriors. The patterns on the menu represent an Asian Chinese form of art called shadow play theater. The noodles offer traditional Chinese flavor in a modern bowl, which is recyclable."

"I hope that our young generation of Chinese can become the group of people who will lead the world in the future. I hope that Chinese culture can be more universal. It can be understood, accepted, and loved by Europeans."

"There are over 1000 Chinese restaurants in Paris. Many, like Mr.Zhao, are trying to change the image of Chinese cuisine by presenting authentic and traditional Chinese food in a global way. Chinese restaurants in Paris began holding a China New Year Food Festival in 2017, which made the French fall in love with the real Chinese taste."
